Aegean cuisine for a healthy Ramadan menu

Health experts agree that a lighter menu in iftar, the fast-breaking dinner, and sahur, the pre-dawn meal, can help prevent health problems during the month of Ramadan, the Muslim month of fasting.

Known for its lightness, Aegean cuisine can be the best choice for Ramadan meals, especially in summer when longer days mean long hours of fasting.

Stuffed vegetables with olive oil, artichoke, vegetable patty and stuffed squash blossoms, are few Aegean dishes that can make a lighter Ramadan meal complete.

Chef Semen Öner said that the Aegean cuisine is one of the healthiest cuisines in the world because of its use of olive oil as the main ingredient. He said that fresh vegetables cooked with olive oil are the healthiest and lightest menu for Ramadan tables.

"Fresh Aegean vegetables can also be cooked with minced meat and potatoes. These vegetables can also be cooked with egg," said Öner.
